What happened to the food in Albuquerque?

When did all the food places in town turn into gentrified novelty bs? I tried looking up a hotdog stand on Google thinking I’d find a normal hot dog place...nope not in Albuquerque. It’s like every mom and pop place has gone extinct and replaced with California style slop. Rip Griffs and Little Red Hut. This city has definitely lost its magic. At least lotaburger still tastes the same(sarcastically rolling my eyes). Disgusting how a small town won’t support local but are begging for big companies like In-n-out and Shake shack to take the market over.
